When is the right time to make Banana Walnut Muffins? The answer is… when you find your bananas are going bad! No wasting food here! Whenever my bananas go bad, the first thing I think of are making these yummy muffins. This recipe is very easy to follow and doesn’t take up a lot of your time, 30 minutes to be exact! [10 minutes of prep time and 20 minutes of baking.]
Ingredients:
-3 medium-sized bananas (if bananas are small you can double up)
-1 egg
-1/4 cup of butter [melted]
-1/2 cup of brown sugar (I used light brown)
-1/2 cup sugar
-2 cups of flour
-1 tsp vanilla extract
-1 tsp of baking soda
-1 tsp salt
-1/4 cup of crushed walnuts
Also needed:ย
-Muffin pan [large or small depending on your preference]
-Measuring spoons
-PAM
-Cooling Racks
1. Preheat your oven to 350 degrees.
Place your un-peeled bananas in a zip-loc bag and mash up the bananas.
This step might be fun if you have kids- let them mash them up!
2. In a mixing bowl combine all ingredients & mix.ย
Make sure that you “pre-PAMmed” your muffin tray so that the muffins don’t stick when you go to remove them later on.
3. Now it is time to transfer your mixture into the muffin tray, fill mixture 3/4 of the way full into each cup.
Bake for 20 minutes.ย
*I find the best way to check your muffins are done is to put a toothpick into the center of the muffin and see if the stick feels dry or wet. If it is wet, that means they are not finished baking yet.
*Feel free to make large or small muffins*
I did both in my recipe to make sure I used all of the mixture up!
So there you have it, my Banana Walnut Muffins. YUM! ย They are perfect if you are always on the go or just wanting something that your little toddler can snack on throughout the day (in this case – I recommend making them MINI-muffins!)
