Yesterday, I went over TJ’s grandma’s house (better known as Nan) for some holiday baking. The bakers consisted of myself, Nan and TJ’s brother’s fiance, Heather (aka my sister in law to be). The weather was a wintery mix and it was even snowing a little. Perfect day to bake!
First, we made the dough for the famous italian ricotta cookies. Then we let the dough chill in the fridge for two hours. Onto the next recipe we made the dough for stoffoli and let that chill as well. Next we googled a recipe for TJ. It had to be something with lots of chocolate and peppermint. We found a recipe that would be perfect. As we started to make it we realized it did not require a lot of flour…. then it clicked. This recipe was only for ONE cookie!! If I had looked at the recipe a little more thoroughly, I would have noticed this and not chose to make this particular cookie. Well, we already made the dough, so we decided to give it to TJ. His own personal GIANT cookie. It was around ten inches in diameter! We topped it off with sprinkled peppermint- the perfect cookie for him!
We then took a nice lunch break. Nan made egg salad and tuna salad. She had a nice bread spread and we had a delicious lunch together. Just what we needed to recharge!
Next up on the list was Nan’s special request, Russian TeaCakes. We made the dough and then let that sit for a bit [ lots of resting 😉 ]. The rest of the afternoon we spent rolling dough and baking our cookies. At end of the day we finished off the stroffoli with honey and some colorful nonpareils and make them into the shape of a wreath.
The day was so much fun. We spent seven hours in the kitchen- baking, laughing, eating and decorating. At the end of the day we took pictures of our nice spread. On instagram I #getyourbettyon to BettyCrocker. We got a like back ‘from her’ on two of our pictures! ‘She’ even sent me a comment saying that she really liked our picture and would like to post it on their facebook and instagram page! SUCCESS!! If Betty loves us, we must be good! What a fun day. Will definately need to do this again next year 🙂
