This year we celebrated Mother’s Day a day late. Unfortunately I had to work, but I was off the following day so I invited M&M (Mom and Manny) over for a special dinner. I had a ham in my freezer that I had been wanting to cook up and thought it would be the perfect meal for Mother’s Day.
I had never cooked a ham before and I have to say, for my first time…I did a pretty darn good job! First, we defrosted the ham over night. Then I scored the ham (image below) and simply followed the baking instructions on the ham’s label. What I didn’t realize, until a little too late, was that I had the temperature on a few degree’s higher than I should have. Once I noticed this mistake I lowered it right way. So it did end up burning on the edges a bit, but as soon as I saw this I put tin toil over the ham which helped to prevent further burning. Mid-way I poured a glaze over the ham; mustard, brown sugar and pineapple juice (left over from the can of pineapples that I used to cover the ham).
We started with a nice fresh salad to begin. I served the ham with fresh string beans, baked potatoes warm biscuits and of course some wine! Overall, the ham turned out amazing! To be honest, I don’t even eat ham, but this meal has changed my mind! My mother loved it so much and told me that it was the best ham she had ever had (and that says a lot considering my grandma has cooked the ham every year for Christmas and Easter & she’s an amazing cook!) For dessert we had brownies and mini cake cups served with fresh fruit and whip cream. Couldn’t forget the WC for Manny 😉
Besides eating some yummy food, we had a nice time catching up. I don’t get to see my mom as often as I used too so we love the time we do get to spend together. LOVE YOU MOM! Hope all of you Mother’s had a wonderful Mother’s Day too!
PS; I saved the remainder of the leftover ham and made a delicious pea soup a few days later! Double-score!
